We’re so excited to officially welcome Katie Ghossein, MS, RD, LD to the Mission Dietitian team!

Katie is now accepting new patients and is passionate about helping individuals and families build sustainable, healthy habits that fit real life.

With a Bachelor’s degree from the University of Alabama and both her Dietetic Internship and Master’s degree in Nutrition Sciences from UAB, Katie brings years of experience in outpatient nutrition counseling. After taking a little time away to raise her family, she’s excited to return to one-on-one counseling while continuing to share her love of cooking and nutrition through community cooking classes.

Katie believes lasting health doesn’t come from perfection, it comes from simple, practical changes that add up over time. Her approach focuses on the whole person.
She is passionate about empowering clients with the knowledge and confidence to make choices that support lifelong health and wellness.

When she’s not seeing patients Katie loves to soak up the sun with her family, garden, and bake homemade goodies.

Round 2 of our summer sheet pan series!

Swipe for some fresh, low-clean up ideas to feed your family or meal prep for yourself this weekend 🍑🍅🌽

Some recipe instructions and tips👇🏻

•If using chicken breasts in your recipe, cook for 20-25 minutes on 400F, or until it reaches an internal temp of 165F
•For boneless, skinless chicken thighs, cook on 400F for 30-35 minutes. Bone-in, skin-on will take 40-45 minutes.
•For all recipes: pat your chicken dry, chop veggies, toss in olive oil and dry seasonings. Cover your chicken in marinade/sauce and bake! Top with additional sauce, fresh toppings, etc. once finished. Enjoy!

As dietitians, we have concerns over the carnivore diet, it’s not because we “hate meat.”
Protein is important. Iron is important. B12 is important. Meat can absolutely be part of a healthy diet.

What concerns us is eliminating entire food groups and calling it the answer for everyone.

Here’s why:

• Fiber matters for gut health, cholesterol, blood sugar, and fullness
• Fruits + vegetables provide vitamins, antioxidants, and phytonutrients linked to long-term health
• Many people feel better initially simply because they cut out ultra processed foods, not necessarily because plants were the issue
• Longterm research on all-meat diets is still very limited and not looking promising
• Extreme restriction can create fear around food and become difficult to sustain

Nutrition science consistently supports variety, balance, and flexibility, not extremes.

You do not need to fear blueberries to be healthy.

One whole year of Mission Dietitian! 1️⃣🎉

A few years ago, we were two dietitians, moms, and friends with a dream to start a private practice and improve the lives of others the best way we know how: through nutrition education, community, and real life experience.

We love doing what we do. Because of you all, this isn’t just a passion project- it’s our livelihood. We are so grateful for your support and are excited to see where the next year takes us.

Sharing a typical day of meals from a Registered Dietitian & mom to a 3 year old and 8 month old 💚🥑👶🏼👧🏼

Please know that my day might look different than yours, and that’s okay! We all have different goals, preferences, and capacities to keep in mind. My meals are certainly *not perfect* and each day varies a bit.

Now that I’m in a comfortable groove adjusting to two kids, my focus is really on feeling strong and eating for longevity so I can be the best and most capable mom I can be. Swipe through to get a glimpse of my average day!

•Breakfast: whole grain english muffin w/ berry preserves and 3 scrambled eggs. Non-negotiable for me is adequate protein and fiber in the morning!
•Snack: David’s protein bar after my workout. I knew it would be a few hours until I got lunch so I needed something to hold me over until then!
•Lunch: Big leftover gal!! I made a bean based vegetarian dish for dinner the night before and threw together a salad to have on the side.
•Dinner: Super unaesthetic Greek turkey meatballs with lemon orzo and peppers and onions, topped with a yogurt based sauce.
