We have lots of shrimp out there packed in ice. Maybe we should do this this weekend?
Slow Cooker Cajun Shrimp Boil 🍤🌽🥔
Ingredients
* 1½–2 lbs baby potatoes
* 4 ears corn, cut into smaller pieces
* 1½ lbs raw shrimp, peeled and deveined
* ½ cup butter, cut into pieces
* 2 tbsp Old Bay seasoning
* 1–2 tbsp Cajun seasoning
* 3 cloves garlic, minced
* 1 lemon
* 2 tbsp chopped fresh parsley
* ½ cup chicken broth or water
Directions
1. Add the baby potatoes to the slow cooker. Pour in the chicken broth and sprinkle with about half of the Old Bay and Cajun seasoning.
2. Cover and cook on HIGH for 2–2½ hours or LOW for 4–5 hours, until the potatoes are starting to become tender.
3. Add the corn pieces and continue cooking for another 30–45 minutes.
4. Add the raw shrimp on top. Sprinkle with the remaining Old Bay and Cajun seasoning, minced garlic, and pieces of butter.
5. Cover and cook on HIGH for 20–30 minutes, just until the shrimp are pink and opaque. Avoid overcooking them.
6. Squeeze fresh lemon juice over everything and gently toss so the potatoes, corn, and shrimp are coated in the seasoned buttery sauce.
7. Sprinkle generously with chopped parsley.
8. Serve immediately with extra lemon wedges and melted butter on the side.
