We have lots of shrimp out there packed in ice. Maybe we should do this this weekend?

Slow Cooker Cajun Shrimp Boil 🍤🌽🥔

Ingredients

* 1½–2 lbs baby potatoes
* 4 ears corn, cut into smaller pieces
* 1½ lbs raw shrimp, peeled and deveined
* ½ cup butter, cut into pieces
* 2 tbsp Old Bay seasoning
* 1–2 tbsp Cajun seasoning
* 3 cloves garlic, minced
* 1 lemon
* 2 tbsp chopped fresh parsley
* ½ cup chicken broth or water

Directions

1. Add the baby potatoes to the slow cooker. Pour in the chicken broth and sprinkle with about half of the Old Bay and Cajun seasoning.
2. Cover and cook on HIGH for 2–2½ hours or LOW for 4–5 hours, until the potatoes are starting to become tender.
3. Add the corn pieces and continue cooking for another 30–45 minutes.
4. Add the raw shrimp on top. Sprinkle with the remaining Old Bay and Cajun seasoning, minced garlic, and pieces of butter.
5. Cover and cook on HIGH for 20–30 minutes, just until the shrimp are pink and opaque. Avoid overcooking them.
6. Squeeze fresh lemon juice over everything and gently toss so the potatoes, corn, and shrimp are coated in the seasoned buttery sauce.
7. Sprinkle generously with chopped parsley.
8. Serve immediately with extra lemon wedges and melted butter on the side.

Thank you to the hard working ladies of Merit Women’s Hospital for attending the Diabetes Foundation of Mississippi luncheon and Fashion Show.
These beautiful ladies help run Dr. Leys clinic and Women’s.
Every cent raised from this week’s event goes to Kamp Kandu to help educate families and newly diagnosed kids with Type 1 diabetes.
Although Dr. Ley was not able to attend, he sponsored a table to show his support.

Dr. Ley brings yet another FIRST to Mississippi.
Intraoperative Fluorescence Imaging.
What is it?
It's an extra procedure he adds to breast cancer surgery that helps lower the need to reexcise if tumor margins aren't clear.
Dr. Ley injects the patient with Lumicell two hours before surgery. Then, during surgery he and his team scan the tumor cavity to make sure they've removed all the cancer. Lumicell helps them locate these cells more clearly.
Dr. Ley already has a reexcision rate of less than 2% (going back to surgery)...but he hopes to drop that rate to zero with the help of this pharmaceutical additive.
Dr. Ley is known worldwide for his innovate approach in treating breast cancer. Aren't we glad to have him here at home in Mississippi.

He’s attending a one of a kind, Ni**le Sparing Robotic Mastectomy course.
