Fuel up your morning with a breakfast pizza! Grab your favorite flatbread, eggs and some healthy toppings to make this fun balanced breakfast. For more healthy recipe ideas, check out our free Dietitian-led cooking classes at Monmouth Medical Center’s LiveWell

Healthy Breakfast Pizza

Ingredients
- 2 whole grain flatbreads (Naan, pita bread or other round flatbread)
- 4 large eggs
- 1/4 cup cottage cheese (optional)
- Salt and pepper – to taste
- 1 cup fresh spinach leaves, roughly chopped
- ½ red bell pepper, finely diced
- 4 chicken breakfast sausage links, cut into dices
- 1 cup shredded cheese of choice
- Chopped chives – optional for topping the pizza

Directions:

1. Preheat the oven to 400°F. For an extra crispy crust, preheat a baking sheet by placing it in the oven while the oven preheats and while you prepare the eggs.
2. Crack the eggs into a medium bowl. Add the cottage cheese, if using, and whisk well.
3. Heat a skillet to medium heat on the stovetop and coat the pan in butter or olive oil to prevent sticking. 
4. Pour the eggs into the pan and toss and cook them until firm and cooked through.
5. Once the eggs are cooked, top each flat bread with the eggs, dividing them evenly between the flatbreads. Add the veggies, chicken sausage, and some shredded cheese. 
6. Carefully transfer the pizzas to the preheated baking sheet and bake for about 8-10 minutes until the edges are golden and the cheese is nice and melty.  
7. Once the pizza is done, remove it from the oven, let it cool for a few minutes. Cut and serve!

Her vigilance, clinical expertise, professionalism, and unwavering commitment to patient safety exemplify the very best of nursing. Nicole is an invaluable member of our PACU team, and we are incredibly fortunate and proud to call her our colleague.

Grab your summer zucchini and whip up a delicious one-skillet meal in under 30 minutes with our dietitian’s Creamy Zucchini Pasta Skillet.

30 Minute Creamy Zucchini Pasta Skillet
Ingredients:
- 2 tablespoon olive oil plus more for drizzling
- ½ cup yellow onion, finely diced
- 2 cloves garlic, minced
- 2 cups zucchini, diced
- 1 can chickpeas, drained and rinsed
- 2 cups water or vegetable broth (plus up to 2 more cups as needed)
- 1.5 cups pasta ditalini or other small pasta
- ½ cup parmesan cheese, grated
salt and pepper, to taste
- 2 teaspoon lemon zest, optional
- Handful of fresh basil, roughly chopped
Instructions
1. Heat a large pan over medium heat and add the olive oil.
2. Once the olive oil is heated, add the onion and sauté until softened, about 3 minutes. Add the garlic and sauté for an additional minute.
3. Add in the zucchini and chickpeas and stir them in with the onion and olive oil. Season with salt and pepper.
4. Add 2 cups of water or broth and let liquid come to a boil. Let the zucchini and chickpeas cook for 4-5 minutes.
5. Remove 1 cup of the zucchini and chickpeas into a measuring cup and blend with an immersion blender until completely blended. Add the blended zucchini and chickpeas back into the pan.
6. Once the liquid comes back to a boil, add in the pasta.
7. Cook the pasta, stirring frequently. If the pasta starts drying out, add more water or broth one ladle at a time. Continue this process until the pasta is cooked to your liking.
8. Remove from heat and stir in the grated parmesan cheese and lemon zest. Serve topped with fresh basil and a drizzle of olive oil.

The American Heart Association has once again recognized us nationally with their Get With The Guidelines®-Heart Failure Gold Plus with Target: Heart Failure Optimal and Type 2 Diabetes Honor Roll recognition. The award recognizes the hospital’s commitment to ensuring heart failure patients receive the most appropriate treatment according to nationally recognized, research-based guidelines founded in the latest scientific evidence. The goal is speeding recovery and reducing hospital readmissions for heart failure patients. MMC earned the award — the highest level of achievement — for a second consecutive year by meeting specific quality achievement measures for the diagnosis and treatment of heart failure and type 2 diabetes patients at a set level for a designated period.

Twenty participants in the Monmouth Council of Boy Scouts' Healthcare Exploring Summer Program visited MMC recently, with the students starting their day at the Live Well Center to learn how to make healthier choices and create balanced meals by making their own yogurt bowls and hear a presentation on Public Health career options, which helped the students better understand our healthcare system and the importance of educating our communities. Back at the hospital for the afternoon, they learned about the various machines used for respiratory treatment and the education needed to become an RT. To end the day, team members from the OR and Sterile Processing Department shared the importance of keeping a sterile field in the OR and the necessary steps to sterilize and maintain surgical instruments.

Thank you to all of our MMC team members for sharing their time and passion for health care and public health with these aspiring health care workers!
