This week in the LiveWell Center Demo kitchen we cooked up one of our favorite skillet meals - Egg Roll in a Bowl! It’s a healthy family-friendly meal, made in 30 minutes or less!
Short cut ingredients like pre-minced ginger and bagged coleslaw-mix, make this recipe a breeze!

30 Minute Meal: Egg Roll in a Bowl
Ingredients:
- 1 Tbsp vegetable oil
- 1 bunch scallions, thinly sliced, light and dark green parts separated
- 1½ Tbsp finely chopped fresh ginger, from a 1½ inch k**b
- 3 cloves garlic, minced
- 1 lb ground chicken
- 1 (1-lb) bag shredded cabbage or coleslaw mix (about 6½ cups)
- ¼ cup soy sauce (tamari if Gluten Free)
- ½ tsp toasted sesame oil
- ⅓ cup salted cashews, chopped
- Rice, for serving (optional)
- Sweet and sour sauce (optional)
- Sriracha Sauce (optional)
Instructions:
1. In a large nonstick skillet, heat the oil over medium-high heat. Add the scallion whites and ginger, stirring constantly for 2 minutes. Add the garlic and cook for about a minute. Add the ground chicken and continue cooking, breaking the meat apart until browned, 3 to 5 minutes.
2. Add the coleslaw and soy sauce to the skillet and cook, stirring occasionally, until wilted and cooked down, 5-7 minutes.
3. Stir in sesame oil and scallion greens. Top with cashews. Serve with rice and top with sweet and sour sauce and Siracha if desired.
