Sometimes the best classroom doesn't have four walls.
Our team had the opportunity to learn inside a traditional Navajo home, a hogan, gaining a deeper understanding of the culture, history, and values that strengthen communities.
As Community Health Workers, experiences like these help us build trust, practice cultural humility, and better serve communities across Arizona.

Every time you chop vegetables, you’re creating the start of your next pot of homemade vegetable broth.

Save scraps like:
🥕 Carrot peels and ends
🧅 Onion skins and ends
🫑 Bell pepper tops and bottoms
🥬 Celery leaves and ends
🥦 Broccoli stems
🍄 Mushroom stems
🌿 Fresh herb stems

❄️ Store them in a freezer bag or container. Keep adding scraps until it’s full.

🍲 When you’re ready, cover the scraps with water, simmer for 45–60 minutes, strain, and enjoy a flavorful broth for soups, rice, beans, stews, and sauces.

💚 It’s an easy way to:
✔️ Stretch your food budget
✔️ Reduce food waste
✔️ Make less trash
✔️ Add flavor without buying boxed broth

Tip: Skip moldy vegetables and avoid scraps from waxed produce. Potato peels can make broth cloudy, and strong vegetables like cabbage or Brussels sprouts can overpower the flavor.

What’s the first veggie scrap you’d save?

Cada vez que cortas verduras, estás preparando la base para tu próxima olla de caldo de verduras casero.

Guarda los restos, como:
🥕 Peladuras y extremos de zanahoria
🧅 Pieles y extremos de cebolla
🫑 Partes superiores e inferiores de pimientos
🥬 Hojas y extremos de apio
🥦 Tallos de brócoli
🍄 Tallos de champiñones
🌿 Tallos de hierbas frescas

❄️ Guárdalos en una bolsa o recipiente apto para congelador. Sigue añadiendo restos hasta llenarlo.

🍲 Cuando estés listo, cubre los restos con agua, cocina a fuego lento durante 45–60 minutos, cuela el líquido y disfruta de un caldo lleno de sabor para sopas, arroz, frijoles, guisos y salsas.

💚 Es una forma sencilla de:
✔️ Optimizar tu presupuesto para alimentos
✔️ Reducir el desperdicio de comida
✔️ Generar menos basura
✔️ Añadir sabor sin comprar caldo envasado

Consejo: No uses verduras con moho ni restos de productos encerados. Las peladuras de papa pueden enturbiar el caldo, y las verduras de sabor fuerte, como el repollo o las coles de Bruselas, pueden dominar el sabor.

Preparing the soil is about more than planting a seed, it’s about honoring generations of knowledge.

Our team had the opportunity to learn alongside Diné community members about traditional dry farming, a practice that works with the land and natural rainfall to grow food in the high desert.

Experiences like this strengthen our understanding of the communities we serve and remind us that some of the most effective solutions have been passed down for generations.

Thank you to our community partners for welcoming us and sharing your knowledge. We are grateful to learn with you.
