Vegan yogurt options in our area are abysmally limited: low in protein, high in saturated fat, and expensive to boot. I was really craving a yogurt parfait and this totally hit the spot. 🎯 It is not actually yogurt—there are no cultures, I’ll have to get that elsewhere, but the texture is great and it’s super high in protein and fiber. I suppose you could call it chia pudding but I have never had a chia pudding recipe I liked so I don’t want to call it that 😂
Into a Vitamix or similar high speed blender:
1 cup Eden soy milk (12g protein)
1/4 cup hempseeds (20 G protein)
1/4 cup JOI・Plant Milk Reimagined powdered soy milk (18 G protein)
1 tsp vanilla
4 dates (2 g)
OPTIONAL: 2 TBSP chia seeds (4 g) if you want it thick as shown. For a traditional yogurt consistency omit. Both are tasty IMO
Blend everything including chia seeds.
~56 g of protein and 21 grams of fiber! I think it makes 2-3 portions depending on how hungry. Top w berries, Ezekiel granola. Omit the dates if you want it savory (if that was the case I’d add some ACV)
Portion into mason jars or Tupperware and put in fridge overnight for firmer texture, but you can enjoy right out of the blender for a more creamy pudding consistency.
I have done this w silken tofu and but I think this tastes SO much better. And much higher in protein.
