Four of our favourite ways to enjoy eggs for breakfast following weight loss surgery include:

βœ”οΈ eggs with smashed avocado and feta

βœ”οΈ scrambled egg mixed with ricotta, served with mashed avocado and baked beans

βœ”οΈ scrambled egg on a toasted Sandwich Thin scraped with Vegemite, relish or chutney

βœ”οΈ omelette with any combination of the following: tomato, mushroom, spinach, spring onion, chargrilled vegetables, herbs, chilli, grated cheese, feta, smoked salmon, shaved ham or turkey.

Our Green Chicken Curry sure packs a protein punch! πŸ‘Š

With 24.5g protein and only 12g carbs per small serve, this is a flavour-packed way to help hit your protein target πŸ’ͺ🏻

Makes 4 small serves
1 teaspoon olive oil
400g chicken, trimmed of fat, cut into strips eg. breast, thigh or tenderloin
2 1⁄2 tablespoons green curry paste
2/3 cup Carnation Light & Creamy evaporated milk with a tiny drop of coconut essence
1 tablespoon fish sauce
1 tablespoon Kaffir lime leaves, shredded
1 cup baby corn
1 cup green beans, trimmed, sliced diagonally
1 small red capsicum, sliced
2 teaspoons cornflour

Heat olive oil in a frying pan. Add chicken and stir-fry for 5 minutes or until starting to brown. Add curry paste and stir fry until fragrant. Stir in evaporated milk, fish sauce and kaffir lime leaves and bring to the boil. Reduce heat to low, add corn, green beans and capsicum and simmer until tender. Whilst simmering, dissolve cornflour in just enough water to make a paste. Add to the simmering curry, stirring until well combined. This should help thicken the sauce.

Nutrition information per small serve: kilojoules 965, calories 231, protein 24.5g, fat 8.5g, saturated fat 2.5g carbohydrate 12g, fibre 4g.
