What a rainy July day it was today! I decided to do some of my ✨ Dr. Jessica magic ✨and prepare some fermented deliciousness for the cooler weather yet to come (I know, I don't want to think about it either)!
I combined raw Alaskan honey 🍯 and made all-organic lemon-garlic honey and lemon-ginger honey as a proactive way to keep my family's immunity up.
These simple, whole food recipes are great for using when someone has a sore throat or the first signs of feeling unwell. Just make sure your family is keeping up on their adjustments, too!

Layer whole or sliced raw garlic 🧄 cloves or sliced ginger 🫚, thinly sliced organic lemons (seeds removed), and raw, unpasteurized honey in a sanitized glass jar. Leave an inch at the top, ensure all ingredients are submerged in honey, and seal. Ferment at room temperature for 3 to 4 weeks, burping the jar daily. 🫧
To get this sweet, pungent immune-boosting ferment ready, follow these detailed steps:
Ingredients & Tools
• Garlic: 1 cup of peeled fresh garlic cloves (can be left whole or lightly chopped/crushed). 🧄
• Lemon: 1-2 organic lemons, washed and sliced into thin wheels or wedges (remove any visible seeds). 🍋
• Honey: 1 to 1.5 cups of raw, unpasteurized honey (local is great). Note: Do not use processed/pasteurized honey, as it lacks the wild yeasts needed for fermentation. 🐝
• Jar: A clean, wide-mouth mason jar with a plastic, non-metallic lid.
Starting with a layer of the honey at the bottom, layer lemon, then honey, and then either garlic or ginger, honey again, and repeat as you are making sure that honey covers every part of the ingredients and is filled to the top.
