How omelets are old, delicious, & versatile.

Patients always admit they struggle with creativity in the kitchen. This is often a roadblock to success when it comes to "sticking with" a diet or new eating pattern.

ENTER THE OMELET.

Throw whatever you have on top of it. Here we have a Taco 🌮 Omelet.

Or try a veggie. A pizza. A greek version. Or a simple Toddler version with cheese, eggs, & ketchup.

Estimates show that 70% of adults suffering from various mental health illnesses haven't been diagnosed, have not sought treatment, or are not currently under medical care.

This could be due to under-diagnosis. Or lack of health insurance. Or other resource-deficits.

But 70% is a HUGE number of people.

After school KID TIP: Make a veggie plate at the beginning of the week. Cover it with plastic wrap OR (better yet to reduce environmental exposures!) place it in a glass container & place it on the counter when your people are hungry. The "grab & go" method will work with this...or a bag of chips.

The hard truth is that we eat what is in front of us.

So make it easier for your family to fill up on veggies before dinner. This takes 5 minutes to prep!

Anxiety is a complex condition--& is on the rise.

In fact, it is up 47% since 1990.

Does this have to do with the accuracy of diagnosis? Or are we, as humans, simply getting more anxious?

Here are some facts:
- anxiety lives in a part of our brain where logic doesn't reach
- anxiety FEELS worse & more volatile when our brain makes pathways deeper & deeper--making those physical feelings of anxiety easier & easier to reach
- anxiety is a feeling that has helped us survive as a human race. But displaced anxiety--feelings that are misplaced in situations that shouldn't make us feel panic--can sometimes cause disruption in daily life
- the best treatment is "both/and": BOTH therapy AND medication. BOTH coping skills AND lifestyle changes.
- anxiety can be part of a season of life OR can be a chronic, lifelong condition

Beans are 🦄 magical. Think about this: every culture around the entire World regularly consumed legumes in some form. Tofu. Black beans. Pinto beans. Lentils.

Fiber helps prevent colon cancer, treats constipation, stabilizes blood sugar absorption, & lowers cholesterol.

Try adding a legume of your choice to every dinner this week. And here is a great recipe (adapted from )

3 Tbsp (45 ml) + 1 tsp olive oil (divided)
1 medium shallot (minced)
3 cloves garlic* (minced)
1 Tbsp flaxseed meal + 2 ½ Tbsp water (to make flax egg) OR 1 large egg
1 1/2 cups cooked + cooled french green lentils*
1 pound sausage (mild or spicy, your choice!)
1 1/2 Tbsp dried Italian seasonings (dried basil + oregano)
1/4 cup fresh Italian parsley
1 Tbsp tomato paste
5-6 Tbsp vegan parmesan cheese (plus more for coating)
~1/4 tsp Sea salt and black pepper to taste
2-3 Tbsp flour (or gluten-free oat flour or panko bread crumbs*)

Mash or use food processor to break up lentils & create a thick paste. Okay if some lentils remain whole. Mix all other ingredients in a bowl or in the food processor. Add enough flour to create a thick, sticky paste.

Form small 1-inch ball shapes with mixture. Bake at 375*F for at least 20 minutes--flipping halfway through to ensure even-cooking. Cut open before serving to ensure sausage is fully cooked.
