Wired and exhausted at the same time by 3pm.

That's not low willpower. That's your blood sugar crashing.
It's called reactive hypoglycaemia: a glucose spike from a carb-heavy meal, then an insulin overshoot that drops you too low. The answer isn't more discipline. It's protein, fat and fibre first β and finding out why your blood sugar swings this hard in the first place.
