✨ Something really special is in the works…

Years of dreaming.
Years of planning.
Years of creating.
Years of healing.

What began as an idea has grown into something far bigger than I ever imagined, rooted in community, connection, wellbeing and hope.

There have been setbacks, lessons, challenges and moments where giving up would have been easier. But every step has led to this next chapter.

For now, all I can say is…

🌸 Watch this space.
🌸 The next part of the journey is only beginning.
🌸 Something beautiful is coming.

Thank you for being part of the story so far.

What happened in Belfast is horrific, and my thoughts are with the family and loved ones of those injured.

As an Irish woman and someone who has spent years advocating for vulnerable communities, I do not believe riots, racism, intimidation, or the destruction of local businesses are the answer to any crime.

Elon Musk does not represent my views, nor does any public figure who amplifies division at a time when communities need calm, compassion, and responsible leadership.

Let the PSNI do their job. Let the relevant authorities investigate. Let justice take its course.

Over the coming days, I hope we choose peace over anger, facts over rumours, and unity over division.

Our communities are stronger when we stand together, support one another, and refuse to let fear or hatred define who we are.

🇮🇪 Choose peace. Choose compassion. Choose community.

Not only have I endured the violence, the trauma, and the long road through the legal system, I have also experienced the heartbreak of watching extended family members, people I once considered to be friends and others choose silence, denial, or protection of those who caused harm in my life.

Survivors already carry enough.

We should not have to fear that the counselling and therapy we attend to heal will be weaponized against us in courtrooms or legal proceedings.

Therapy is where we process trauma. It is where we rebuild our lives. It is where we learn to feel safe again.

Our healing is not evidence.
Our trauma is not a defence strategy.
Our counselling notes are not weapons for perpetrators.

Wednesday at Leinster House, I stand in solidarity with survivors of gender-based violence, sexual assault and r**e.

Enough is enough.

10 years ago today, at the age of 37, I underwent a hysterectomy and was told I was “cured.”

I believed it.

What I wasn’t told was that Endometriosis has no cure.

I was diagnosed with Stage 4 Endometriosis in 2005 at the age of 26. By the time I underwent my hysterectomy in 2016, I thought the fight was finally over.

Instead, I spent the next TEN MORE YEARS fighting for answers, fighting for treatment, fighting to be heard, and fighting for access to specialist care.

TEN MORE YEARS of chronic pain.

TEN MORE YEARS of surgeries, referrals and medical appointments.

TEN MORE YEARS of being sent from pillar to post.

TEN MORE YEARS of living with the consequences of a disease that was never truly treated.

And today, despite Ireland finally introducing the Endometriosis Surgery Abroad Interim Scheme (ESAIS), I still find myself unable to access the specialist care I need.

I was approved under the scheme. I travelled abroad. I followed the process.

Yet I have now been informed that the clinician I was referred to is not the appropriate specialist for my case, leaving me once again without a clear pathway for treatment.

ESAIS was an important first step, but there are significant gaps in the scheme.

Patients are expected to find the money for accommodation, food, airport transfers, taxis, trains, public transport, luggage costs and many other expenses associated with travelling abroad for medical care.

For those of us living on disability payments, reduced incomes or unable to work because of chronic illness, how is this realistic?

Being approved for care and being able to access care are two very different things.

Ten years ago I was told I was cured.

Instead, I spent TEN MORE YEARS fighting for care.

And today, I am still waiting.

We’ve been keeping a little secret… 👀

Earlier this year, The Gluten Free Kitchen Company was honoured to receive two prestigious awards:

🏆 Best Gluten-Free Artisan Food & Wellness Brand – Irish Enterprise Awards 2026
🏆 Community Wellness Excellence Award – Irish Enterprise Awards 2026

And now, we are absolutely delighted to announce that we have won another award! ✨

While we can’t share all the details just yet, this latest recognition is a huge honour and a testament to the journey we have been on since 2011.

What started as a mission to provide safe, delicious gluten-free safe quality food for the coeliac community has grown into something far bigger than I could ever have imagined. Through food, wellness, advocacy, podcast, and community, we continue to create spaces where people feel seen, supported, and included.

To every customer, supporter, collaborator, and member of our community - thank you. Your support has carried us through the highs, the challenges, and every milestone along the way.

We can’t wait to share more with you very soon. 💚

For so many of us living with endometriosis, the hardest part of the journey isn’t just the disease itself — it’s feeling unheard, dismissed, and left to navigate it alone.

That’s why initiatives like Endo Collective matter. They are creating spaces where lived experience is valued, patients are empowered, and the realities of this disease are acknowledged.

As someone who has spent over 20 years navigating Stage 4 endometriosis, multiple surgeries, infertility, hysterectomy, surgical menopause, and ongoing specialist care, I know how important community and patient-led advocacy can be.

If you’re living with endometriosis, supporting someone who is, or simply want to learn more, I encourage you to watch and support their work.
