πŸ‘©β€πŸ³ TOFU IN PEANUT SAUCE πŸ₯œ

Serves 4

1 tbsp. coconut oil
2 ΒΌ cups (400g) tender stem broccoli
1 β…œ cups (350g) firm tofu
For the sauce:
ΒΌ cup (65g) natural peanut butter
2 tbsp. tamari or soy sauce
2 tbsp. water
5 tbsp. honey
1 tsp. sesame oil
Β½ tsp. chili flakes
1 tbsp. ginger, grated

What you need to do:

1. Firstly, prepare the tofu. Drain all the water, and sandwich it between two paper towels and two plates. Place a heavy item like a can on the top plate. Press for at least 30 minutes.

2. Cut the tofu into Β½ inch (1.25 cm) cubes.

3. Mix all the sauce ingredients and set aside. Steam or boil the tender stem broccoli until tender, set aside.

4. In the meantime, heat the coconut oil in the pan over medium heat and cook the tofu for around 10-15 minutes, occasionally tuming, until browned. Add in the prepared sauce and stir well. Remove from heat and serve with the cooked broccoli.

Serves 2

10 oz. (300g) cod fillets
1 tbsp. lemon juice
2 cloves garlic, crushed
Β½ tsp. turmeric
Β½/ tsp. paprika
Β½ tsp. cumin pinch of saffron
2 tbsp. olive oil
scant Β½ cup (100g) of bulgur groats
1 tomato, chopped ΒΌ onion, chopped 15 green olives, halved
3 sprigs of parsley, chopped lemon wedges, to serve

What you need to do:

1. Drizzle the cod fillets with lemon juice, then season with salt and pepper. Rub with the garlic, and the rest of the spices and coat with 1 tbsp. of oil. Leave for half an hour to marinade.

2. Cook the bulgur in salted water (about 15 minutes) and once cooked, set aside. Place the chopped tomato in a salad bowl, add in the chopped onion, olives and parsley. Season with salt and pepper, mix and set aside.

3. Heat the pan, and fry the cod for about 3-4 minutes each side, until cooked throughout, then remove from the pan.

4. Heat the cooked bulgur on the same pan, with the remaining juices, then divide between plates. Serve with the cod and top with the prepared tomato salad. Serve with lemon wedges.

Serves 4

1 cup (240ml) carrot juice
1 mango, peeled, chopped
1 cup (165g) pineapple, chopped
1 tsp. ginger, grated
ΒΌ cup (60ml) coconut water

What you need to do:

1. Place all ingredients into a high-speed blender and blitz until smooth. Serve over ice.
